Greek Yogurt Dressing:
Juice of 1 lemon (fresh is better than concentrated juice)
1/2 cup Greek yogurt (fat free or not as you like)
1 small-medium clove garlic, minced or if desired finely chopped into a paste
1/4 cup EV Olive Oil
Salt and ground black pepper to taste
Mix it all up & enjoy!
Now that is the recipe as written & given to me. I usually never follow a recipe to the letter. For this one I found the 1/4 cup EV Olive Oil
to be a bit much so I use half that. Sometimes I squirt in a bit of brown or yellow mustard for added flavor or color. I've used both Olive & Sesame oil in the same batch, if you know sesame oil it has a bold flavor so use just a bit in place of some of the olive oil.
So this recipe really gives you a base to work from and play with.
