Day 459 - Here Fishy Fishy

I know, I know; I showed you a picture of fish yesterday. But, those fish we did not eat, which is a shame I know. But this fish, this fish I did eat. And it was so good!

Up there you see it as I placed it on the grill. It rests on a cedar planked soaked in water & lemon juice. The fish, Steelhead Salmon, is seasoned with a fish seasoning I bought in Seattle (the fish I did not buy in Seattle), and crusted in Onion & Garlic Macadamia Nuts. The came from Hawaii and from this package to be specific...

Here is dinner after it came off the grill...
Before I closed the grill I tossed in a handful of apple wood chips while cooking to give it a lovely blast of sweet smokiness.

As good as it looked coming off the grill I must say it looked its best when I plated it...
Yes, I was in the mood for fruit with dinner. or maybe I was in the mood for sweetness without the bad news from the sweets in the candy counter or bakery aisle.

That dinner was a great way to cap off a great workout. After worked I got my youngest off the couch to join me for C25K-Week1/Day2. The 93F heat was definitely a challenge. A slight breeze tried to take some sting out of the heavy air but to little avail.

Cameron is a soccer player in high school so you would expect him to look at this workout as a walk in the park. But it was quite the opposite for him. He has become quite out of shape since the end of soccer season his freshman year. Even though he hit his final growth spurt over the past six-months, oh how we hope it is his final spurt; his appetite spurted as well and not with a desire for healthy eats.

Thus he struggled to make it through the 60 second jogging segments and his walking segments were quite slow. He knew it, and wasn't happy about it. Soccer tryouts are in a couple of weeks and the start of his sophomore year  five weeks away; yes summer break has begun its descent for landing.

Myself, I got through D2 much better than D1. A day of good eating and anticipation of the workout helped that progression occur. Later this week I will get Day3  in and conclude the trio of workouts that make up a week. Hopefully I can grab Cameron for another workout; doubt he shares that same hope.

Day 451-452: Clean Butt Thanks To Lady Luck

Monday's colonoscopy was all good news. The best part of the news was the fact I do not need to go for another one for 3 years, thank you!!!

Lady Luck was with me in the morning as I was first up on the list for my colonoscopy Monday morning, a 7:30 a.m. appointment. It couldn't have been 7:35 a.m. when they were knocking me out. Good thing too as the power went out shortly after 8 a.m., just minutes after I began waking up, the procedure complete. Those who were there, all prepared and waiting for their turn, they had to wait until the power came back on. Sure the back up generators kicked in and the placed looked as if all was normal. But apparently they are not allowed to start non-emergency procedures while on back up generator power.

That was nearly 24 hours ago. At home, our power is still out. Oh I hope they were able to get the hospital's power back online yesterday morning so that those folks waiting for there colonoscopy could get it done. It would score very high on the Suck-O-Meter if you had to reschedule that appointment after starving the day before & flushing out the plumbing that night. Hence why Lady Luck was with me in the morning.

Since our power is still out, I think Lady Luck left me, left the county it seems, as soon as the storms moved into our county yesterday morning. The storm swept through the area swiftly but it's brief stay was enough time to deliver a potent hit. I am one of the nearly 1-million Chicagolander's who lost power right away. As of this minute about 350,000 are still without power including us.

Well, speaking of this minute; I am at work where it is cool, there is internet (hence the blog post), there are cold beverages... the kids however are at home where it is hot, there is no internet, there are angry cats, and no cold beverages. I suppose I should feel bad for them.

Last night we grilled out for dinner. Since I wouldn't allow anyone to open the refrigerator of freezers when the power went out, we had to either make do with what was in our pantry or find something at a store to grill. Earlier that day when I had my son out learning to drive I noticed that one of the grocery stores was open for business. They were selling what they could via generator power. We snapped up a package of frozen chicken breasts and Ho-Ho's. So we had grilled garlic-ginger chicken, seasoned corn (from a can), and Ho-Ho's (kids felt these would help them through the heat of the night).


After dinner the kids we besides themselves since there was no internet, no television, no xbox. I had an emergency radio on listening to the news, but that did nothing to entertain them. So we broke out some old-school entertainment and played Monopoly. As the day was turning to dusk light became an issue. But we fared well making use of flashlights.


For the record, Cameron kicked all of our butts, it wasn't even close.

Day 410 - Have I Bored U Yet?

Welcome to Wednesday, Welcome to June; yes it is June already!

I'll resume the 14 part series on Leadership Traits soon. I never intended to present it 14 days in a row but to break it up over several weeks. Remember I have BADD, Bloggers Attention Deficit Disorder ADD, so I tend to jump topics from day to day without much rhyme or reason at times.

Actually I am way short on time this morning. We are moving within the office here. We do this every 12-18 months, shift everyone around to a different location within the corporate campus. Today is that day, today I am moving 14 columns to the north and 7 rows to the east. Our buildings are laid out like spreadsheets and cubical locations addressed similar to how a cell in a spreadsheet is addressed. Have I bored you yet? Have I scared you away from wanting to work here?

Anyhow, as I am short on time, let me share some recent photos of my days...

Day 353 - Bring On The Needles!

Some good news on the cancer battlefield... The MRI on my knee showed NO metastatic cancer there; whew! Above is one of the 180+ images of my knee, I have no idea of know what I'm looking at there is good or not, and don't care as long as I'm told it is sans cancer.

We engage the enemy next on Thursday for a blood test to determine if there are any indicators that the melanoma has spread beyond skin or lymph nodes. Bring on the needles!

Exercise, lets talk exercise... I took two of the boys to the YMCA Sunday to get some sweat'n on...
Needed a warm up since I pulled them out of bed to join me, so we started with a mile on the elliptical:

That was enough, I was wiped, they were anything but wanting more. Not a routine you'd find a trainer advise perhaps, but on this day it was our routine.

Day 295 - Fit For Me & Familiy

Yesterday was a day of rest where my exercise is concerned. And much needed too. The soreness from the weeks workouts and snow removal needed the day to ease some.

Today is a new day and exercise was on the schedule. And that we did first thing today. Yes, I said we... My wife, two of my sons & I headed off to the YMCA first thing to get busy. My wife joined the Y last year so that she could swim. She was a swimmer in high-school & college so swimming is her exercise of choice.

Recently we expanded her membership to a family membership so that I can go with her and use some of the equipment there I do not have in my basement and never will. That and she suggested we do so as she'd be more apt to go and swim if I went to the Y too. So how could I say No to that?

Here are a few pictures of the boys & I getting busy. Nope, no pictures of my wife in the pool. But up top there I do have one of her pitching in to remove the snow the snow plows pushed back in our driveway over night...

I've had core on the mind allot lately and so making use of this INCLINE SITUP bench was a must.
Don't be too impressed, it is inclined just one notch above horizontal to the floor.

We finished with some BACK-TO-BACK MEDICINE BALL TWISTS w/ a 12 pound ball.
Since there were three of us we rotated someone in/out on each 12 count.
In the end we each had participated in three sets of 24.
 
We had a BLAST.

Day 258-259 Last Day & Birthday

Today is the last day of the year and that means it is Cameron's birthday. There he is proudly displaying the antlers from his first deer which he harvested in October. This week we finally mounted those antlers for him.

We'll celebrate his birthday later today with buffalo wings I am sure; he is a connoisseur of buffalo wings if there ever was one. As well we will celebrate New Years eve and ring in the new year from the safety and comfort of our home.

I'll hold off on any year-end wrap up and year-new posting material until tomorrow. Have some fun stiff to get on to with the family this morning but I wanted to put up a quick post for Cam's birthday. Also, answer the riddle from the other day.

This riddle was way too way as most everyone got it right; the defrost vent from my truck...

Nothing wrong with ending the year on an 'easy' note. The challenge to continue getting healthy in the new year will certainly be just that, a challenge, and a welcome one at that.

Day 86 - Da Numbering

Yesterday was time to get away from the neighborhood for my walk so we went to the Rollins Savannah and it's 3.6 mile loop. My wife is nursing a bum leg and couldn't join me but two of the kids did in her place. There you see Cameron & Ashley by the trail map before we got to it.

They are both soccer players so their keeping up with me was not in question. It had been nearly a month since I walked the Savannah for time and then I set my best time of just over 62 minutes. Today with Cam & Ash pushing me I crushed that time and registered an awesome 58:18 minutes. Oh Yeah!, Thanks kids.

As promised yesterday I got the tape measure out and measured myself as part of my celebration for hitting 33% of my weight loss goal.

If I did my math right, and that 'if' should not be taken for granted; but if I did then I have reduced 13" off my apple shaped body so far. Hhmmm, sure; why not - Oh Yeah!

The upper arm measurement confuses me. Either I measured it poorly when took the initial measurement in April, or, the weight/strength training has been more friendly to my upper arms that I could have imagined. Not sure which really.

Another oddity I find in these results is the relationship of the girth, waist and hips measurement. The waist, where I wear my belt, was the considerably smallest loss of the trio. The girth is no surprise as the leader of this trio as it is measure across the widest mass of fat around my gut. Hips, allot of bone involved in the hip measurement but some upper butt fat too I suppose so no question for that loss. Hey, just an oddity as I said, I'll take these numbers!

Oh, forehead. So it didn't move but my progress sure has it feeling rather swelled at the moment.

Day 56 - Saturday Serious

A great week is in the rear view mirror. One I will remember forever thanks to the Stanley Cup Champion Chicago Blackhawks. We capped of the week with an amazing experience at the parade & rally downtown yesterday. We were two of the two-million fans & of the Blackhawk Nation who showed up to participate in the fandemonium. It was truly amazing.

While we are still on an emotional high from this past week we realize it is time to resume our serious attention to our missions to get healthy. Oh we didn't take the past few days off. We did put exercise on the shelf for the past two days while we celebrated, but that's all we fluffed on. Eating was still kept to a healthy level and we woke up this morning feeling good and glad we didn't indulge through our guts the past few days.

This morning we got up and got out for a walk around the Rollins Savannah; a 3.5 mile loop. Up there you see my wife as we stepped off on our walk. It was a great walk on a foggy and dreary morning. I completed it today in 62:55 which was a PR for that loop; cool! When we got home I grabbed two of my boys, Andrew & Cameron, and we hit the home gym for a workout through that routine. Whew, yeah, safe to say we're back on track here. At least that is what my sore muscles are telling me.

The Rollins Savannah is such a cool place to walk, run, bike, whatever people which to do to work up a sweat. Allot of wild life there like this little gal to the right. She was mucnhing on breakfast about 40 yards (36.5 meters for those who've gone metric) off the trail.

It is just about 1 p.m. here in the Stanley Cup Champion time-zone. I await the delivery of a new refrigerator, old one is days away from dying, and the kids are starting to assemble in the family room to watch the World Cup match between England & USA. Go Red-White-&-Blue!

Day 47 - Salsa Cameron

Yesterday our youngest graduated 8th grade. We have no more grade-schooler's in the house. Next year will will have 4 high-schooler's; the one and only year this will happen. There he is, so happy to be done with school regardless what grade it is. High School will come soon enough.

One thing you need to know about Cameron is he is my brother-in-arms when it comes to enjoying hot-n-spicy food. And salsa is just one of the favorite foods we share. I make salsa fresh at home, never buy it at the store. Cameron will often help me whip up a batch and is always sneaking in an extra jalapeno or two when my back is turned. What a good kid!

Yesterday I mentioned salsa in my post and in a reply from River, well this is what she said, "I never make salsa. It doesn't mean much for local cuisine but I think I should. You're giving me nice ideas there :) "

River my friend, why YES I do. I'll come right to the point, here is the recipe and my take on why I make it this way and what you can do to vary it if desired; enjoy...

Salsa - Mild

This is for a single batch which is enough for the typical family gathering, bbq, picnic, etc. of a dozen or so people. I usually make two batches, or three - have made as many as six batches at once, to have plenty of left-overs for myself and to send some home with the family or friends who always ask for a care package of this amazing concoction.

How do I use salsa? One of my favorite uses for salsa is a replacement to salad dressing, or as a replacement to relish on a burger or hot dog. I also use it in omelets, in place of veggies in fried rice recipes, and of course with tortilla chips or on nachos. How do YOU use salsa?

Enough blabbering from me, let's make some salsa shall we?...

Ingredients...
  • 4 large tomatoes (or 6 medium)
  • 1 small onion, white or yellow
  • 1 green bell pepper, size as desired
  • 2 cloves garlic, size as desired
  • 1 bulb of fresh ginger, enough for a Tablespoon when minced
  • 3 sprigs of fresh cilantro (or 1 Tablespoon dried)
  • 1 teaspoon seasoned salt
  • juice of 1 lemon
  • juice of 1 lime
  • For Medium heat, 2-4 jalapenos or 1 habanero pepper.
  • For HOT heat, 5-8 jalapeno or 3 habanero peppers.

Utensils / Tools...
  • Sharp kitchen knife for dicing & mincing
  • Cutting board
  • Strainer with small holes for draining diced tomatoes
  • Large mixing bowl
  • Mixing spoon
  • Food processor / chopper (optional~can dice & mince it all by hand knife too)
  • Juicer, if desired for lemon & lime (optional~can squeeze by hand too)
  • Storage container(s) for finished product

Preparation...
  • Read 'Lessons Learned' below before starting preparation, you'll be glad you did.
  • Place strainer in bottom of clean sink or a in a 2nd large bowl.
  • Dice tomatoes and placed them in strainer to drain while you proceed with other ingredients.
  • Juice the lemon & lime thoroughly, add to mixing bowl (not the bowl tomatoes are straining in if using a 2nd bowl).
  • Dice green bell pepper, add to mixing bowl.
  • Mince garlic, ginger & cilantro, add to mixing bowl.
  • Add seasoned salt & the strained tomatoes to mixing bowl.
  • If making Medium or HOT heat salsa, dice jalapenos or habanero peppers, do not remove seeds or veins as this is where the heat resides, add to mixing bowl.
  • Now mix all of that together real good.
  • Now taste; good huh? See notes below for adjusting flavor.
  • Refrigerate for at least 12 hours. Give the salsa some privacy so that all the ingredients can make love & get in the mood for you.

Lessons Learned...
Tomatoes, I do not like watery salsa so I strain the tomatoes after dicing to drain them of excess water. I also use a food processor for all dicing which also helps to separate more water from the tomatoes. When straining I shake & toss the strainer a bit to help gravity along and remove more water. Of course this is your salsa, make it watery if you insist.

Dicing, I dice to small size bits of approximately 1/4" squares. I find if I go smaller then the salsa ends up more like a cold soup or rough puree. As I use a processor I get great variety in sizes of diced ingredients which add texture & visual character to the finished masterpiece. Of course this is your salsa, cut anything any size you deem necessary to get your mouth watering.

Onion, I love onion flavor but not when it over powers a recipe so I go for a small onion. Test your onion's strength, cut into it and sniff &/or cut a small piece off & taste. If it come off as strong then I consider using less of the onion. Of course this is your salsa, if you are addicted to onions add as many pungent & tear-filled beauties as you & those around you can handle.

Green peppers, I like green because it adds an offsetting color to the dominant red color from all of the tomatoes. This is also why I use white or yellow onions & not red. Of course this is your salsa, so use any colors you like.

Hot peppers, why do I use jalapeno or habanero peppers? Because they are the easiest to pick up at the local grocery store. But do not limit yourself to these. There are dozens of other highly tasty and heaty (is that a word?) peppers out there to play with. One of my faves to substitute with is the Serrano pepper. It's heat level is between that of the jalapeno & habanero but it's flavor is unique and you can get them in so many colors e.g. green, red, brown, orange, or yellow. Of course this is your salsa, so use the pepper that gets your eyes watering but doesn't have you grabbing for a chug of milk to douse the heat. Don't douse please, not pretty.

Vinegar, where is it? I don't use it. But many many many salsa recipes call for it. I like vinegar allot but not in my salsa, I find the flavor conflicts with the citrus. My main reason for omitting it is that if you mess up and use too much it is too easy to ruin a batch and way hard to correct. When I mess up a batch and have to toss it out, I cry. And I don't like to cry, so no vinegar for me. Of course this is your salsa, so kick up the vinegar volume as loud as you please.

Adjusting flavor... Does it need more salt, onion, anything? Then add more. Is it too watery? Then add more ingredients like well strained tomatoes, pepper & onion. But do not remove any 'water' from the mixture at this point; if you do then you are removing lemon & lime juice too & that is a no-no. Of course this is your salsa, do whatever you want and eat some already.

Refrigerating, I highly suggest it. Sure, you can make it and eat it right away. I have done so and it is awesome. But, refrigerate it for 12 - 24 hours and you have kicked 'Awesome' salsa in to 'OMG This is Beyond Awesome' salsa. Of course this is your salsa, eat it however your stomach craves it.
